Brighter Bake is a cookbook authored by Melanie Warner, author of Brighter Better Things. The beauty of the book is that it contains her bestselling The Bigger Bolder Best Recipes, for Bright Baking. This includes recipes such as the Chocolate Chip Chicken, buttermilk Chicken, and the chicken recipe with chicken and spinach. I had not read The Bigger Bolder Best Recipes before reading Brighter Bake, and now that I have, I can say that I love the recipes from this book.
My wife has been asking me to make the Cheesecake Cheeseburger and I was struggling to come up with a way to make it. It was very dark and very rich, so I made a few changes to the recipe to bring out the sweetness. Also, it tasted just like it should, but I did like the result. It may have been due to the fact that I had used the less expensive cream cheese that I had found at the store.
After having made the Cheesecake, I decided to try the Lemon Dill Shrimp with Olive Oil and White Beans with Lemon Glaze, and the Lemon Dill Shrimp with Capers and Herbs. It was simply delicious! As for the shrimp, I had first tried this at the restaurant that I worked at many years ago. I always thought that they were excellent. The recipe is much like the shrimp in the Cheesecake Cheeseburger, except there is no cream cheese for the sauce, which is what I like.
Other Experiments – Bolder Baking
I also made my own version of the Spicy Chicken with Carrots and Red Onion Soup, which were delicious. I am a huge fan of using ginger, garlic, and lemongrass in my recipes. For this soup, I used a combination of fresh ginger, fresh garlic, and lemongrass.
For the Spicy Chicken and Spinach Caprese Salad, I added a little more black pepper to the Dijon mustard dressing. I also sauteed some sliced garlic, some finely diced red onions, and a little olive oil in a little butter and seasoned them with salt and pepper. The result was a fantastic salad.
After my Brighter Baking, I was eager to try another big bolder baking book, called Smart Tips For Breakfast and Lunch. I made several of the recipes in the first book, which included many of the recipes in Brighter Baking. For one of the recipes, I wanted to try something new, so I decided to try the Cornmeal Pancakes.
I simply put the batter onto a greased pan, sprinkled it with sugar, and baked it until the edges were brown. I also wanted to try the Cornmeal Pancakes with a chocolate glaze. So, I chose a Chocolate Plum Cornmeal Pancakes, and the result was delicious.
For vegetarian cooking, I wanted to try a Grilled Vegetable Fondue. This dish also calls for cornmeal and should be done with cornmeal that is not too dry. I wanted to add a little bit of flavor to the cornmeal. So I used the other ingredients that I used for my beef fajita recipes, such as pepper, herbs, and onions. I topped it with soy chorizo, and the result was wonderful.
One of the recipes that I really enjoyed from the Brighter Baking was the Roasted Cauliflower with Garlic and Olive Oil. Instead of cooking the cauliflower raw, I cooked it with olive oil and garlic. I topped it with salt and pepper, and then I brushed it with some pesto. My husband and daughter both loved this dish and so did I.
Another recipe that I found in the Brighter Baking was the Thai-Inspired Chicken and Rice. They are served with Thai-Inspired Soy-Ginger Sauce. The chicken is roasted in a cast-iron skillet and then the sauce is applied while it is still hot on the stove. The dish was absolutely delicious!
